Vineyard Story
Since 1826, the Médeville family has passionately cultivated the lands of Cadillac. It all began when Jérôme Médeville, a cooper by trade, fell in love with Château Fayau and its 12 hectares of vineyards. For seven generations, the family has dedicated itself to enriching and preserving this exceptional heritage. Today, Jean and Marc Médeville oversee 200 hectares of vineyards spanning both banks of the Garonne, continuing the family tradition with unwavering commitment.
Driven by a deep connection to the land and a forward-looking vision, they combine ancestral expertise with modern innovation to craft exceptional wines. Dedicated to preserving this legacy for future generations, they focus daily on quality, consistency, and environmental stewardship, sharing their passion far beyond the borders of Château Fayau.
Appellation: Cadillac
Cadillac is a distinguished appellation within Bordeaux, primarily known for its luscious sweet white wines. Spanning a smaller area compared to neighboring regions, Cadillac benefits from its location along the Garonne River, which creates a unique microclimate. The river’s morning mists, followed by sunny afternoons, encourage the development of Botrytis cinerea (noble rot), essential for crafting these richly flavored wines.
The wines are typically made from Sémillon, often blended with Sauvignon Blanc and Muscadelle, delivering complex aromas of honey, dried fruits, and citrus, balanced by refreshing acidity. Cadillac's clay-limestone soils contribute to the wines' depth and aging potential, making them both approachable in their youth and capable of evolving beautifully over time.
