Vineyard Story
In 1835 Manuel María González bought a small winery in Jerez which he named Tío Pepe in honor of his uncle, who had taught him all about the Jerez winemaking tradition. Soon, this fino was making a name for itself both nationally and internationally until it became, today, one of the most prestigious and recognized Spanish brands worldwide.
Appellation: Jerez Xeres
Jerez-Xérès-Sherry is one of the most famous fortified wine regions in the world, located in Andalusia, Spain, near the city of Jerez de la Frontera. It produces Sherry, a versatile and complex wine with a rich history dating back thousands of years.
The "Sherry Triangle": The wines must come from a specific area bordered by three towns—Jerez de la Frontera, El Puerto de Santa María, and Sanlúcar de Barrameda.
The three main grape varieties used in Sherry production are:
Palomino Fino: The most important grape, used for dry styles of Sherry.
Pedro Ximénez (PX): Used to make sweet Sherry or blended to sweeten other styles.
Moscatel: Typically used for sweet and aromatic Sherries.
Sherry is unique due to its fortification (adding grape spirit) and aging process:
Fermentation: Base wines are fermented dry.
Fortification: Wines are fortified to different strengths depending on the style:
Lower alcohol (15% ABV) allows for the development of flor, a layer of yeast.
Higher alcohol (17% ABV) prevents flor and leads to oxidative aging.
Aging: Sherry is aged in a solera system, a dynamic method that blends older and younger wines to maintain consistency.
